True to its gastronomic philosophy and vision for sustainability, Soil, under the signature of Chef Tasos Mantis, continues to evolve and offer its guests a series of new culinary experiences. The new Chef’s Table proposal, the Alepochori Experience, and the renovated urban courtyard of the restaurant have already opened their doors, inviting guests to discover them. The dedication of the Soil team and the new experiences they constantly create have contributed to the international accolades the restaurant continues to receive.

Soil Among the Top 20 Restaurants in the World

Soil’s ranking among the top twenty restaurants worldwide in the second annual “Global Tastemakers Awards” by the American magazine Food & Wine, and as the only Greek restaurant, further solidifies its commitment to offering high-standard gastronomy with a focus on sustainability, as confirmed by its maintained distinctions of 1 MICHELIN Star and 1 MICHELIN Green Star from the international guide. The esteemed Food & Wine list, compiled after reviews by 180 experts in gastronomy and travel, includes Michelin-starred restaurants with innovative tasting menus to smaller, family-owned restaurants that delve into the culinary heritage of their regions and emphasize the “farm to table” approach.

Delving into the Conception of Dishes through the Chef’s Table

Soil continues its journey through the paths of high, yet grounded, gastronomy by introducing guests to the renewed Chef’s Table. In a renovated and exclusive room, the Chef’s Table invites them to a dialogue with Chef Tasos Mantis, highlighting the restaurant’s philosophy. During the experience, guests will watch dishes being created before their eyes by the chef and his team and will taste new Soil proposals before they are added to the restaurant’s menu, offering a unique behind-the-scenes glimpse into its kitchen.

An Herb Garden in the Heart of Athens

This summer, Soil opens its doors and welcomes its guests to the renovated courtyard of its neoclassical building in Pangrati. With tailor-made furniture crafted from natural materials and solid wood, adhering to the ethos and commitment to sustainability, the courtyard of Soil will become a culinary destination, accompanied by the herbs cultivated there by the restaurant’s team, as well as a small herbal compendium created and offered as a gift to visitors to genuinely acquaint them with its earthy philosophy.
